		<description>Don&#039;t throw those beet greens into the compost.
Keep them fresh in a plastic bag until ready to use.  Prepare them for a wonderful additional vegetable.  Strip the leaves from the veins.  Compost the stems and veins.  Fry some onions.  Then add the beet greens and saute.  Add a 1/4 cup of water, cover and cook about 5-10 minutes until tender. Uncover and cook until water evaporates. Add some salt and pepper.  Serve with a cruet of vinegar.  Enjoy</description>
